Earlier this week, I shared a recipe for a cocktail using the juice of a fresh peach. Then I made peach salsa. And still I had peaches. Today on the Chow Locally blog I came across the following recipe for a topping for ice cream, pancakes or waffles. I think my peach problems are over.
Bourbon Peaches
Prep time, 15 minutes; cook time, 5 minutes; makes 4 servings.
Ingredients
1 tablespoon unsalted butter
3 ripe peaches, peeled & sliced
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1 tablespoon bourbon
2 tablespoons chopped pecans
Preparation
- Melt butter in a sauté pan over medium heat. Add peaches, brown sugar, cinnamon and bourbon.
- Cook for 4-5 minutes. Remove from heat and garnish with pecans. Serve immediately.
