Earlier this week, I shared a recipe for a cocktail using the juice of a fresh peach. Then I made peach salsa. And still I had peaches. Today on the Chow Locally blog I came across the following recipe for a topping for ice cream, pancakes or waffles. I think my peach problems are over.
Prep time, 15 minutes; cook time, 5 minutes; makes 4 servings.
1 tablespoon unsalted butter
3 ripe peaches, peeled & sliced
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1 tablespoon bourbon
2 tablespoons chopped pecans
- Melt butter in a sauté pan over medium heat. Add peaches, brown sugar, cinnamon and bourbon.
- Cook for 4-5 minutes. Remove from heat and garnish with pecans. Serve immediately.
Chow Locally includes nutritional information, but if you’re going to put these Bourbon Peaches on top of pancakes or waffles, I’m betting you don’t care. (If you do, click here.)
